Recipe for Spinach Pies - YUMM!

These are an incredible GRAB N' GO, all natural, ultra tasty kid friendly foods. You can freeze what you don't eat and re-heat.
• 2 lb pre-made pizza dough* – thawed, doubled in size (we use Spelt Right because we make it and it is awesome, but you can use other pizza doughs)
• 10 ounces fresh spinach (rinsed, de-stemmed, chopped finely)
• One medium onion (chopped finely)
• Juice from 2 whole lemons
• ¼ cup extra virgin olive oil
• ½ teaspoon salt
• ¼ teaspoon pepper
• Feta or other cheese (optional)
• Pine nuts (optional)
Pre-heat oven to 475 F.
Mix chopped spinach, chopped onions, lemon juice, olive oil, salt and pepper in a large bowl. Set aside.
• Cut 10-12 even sized dough balls.
• Stretch or roll the dough to about a ¼ inch thick (more or less) rounds, place on oiled pan - we use olive oil.
• Place about 2 tablespoons of spinach onion mix in the center of a five-inch round
• Fold the three sides of the dough over the spinach to form a triangle. Secure dough by overlapping dough when forming the triangle and pinching each side together.
• Bake in 450 - 475 oven – approx. 20 minutes. Done when dough becomes slightly golden and bottoms are slightly brown.
• As a variation, you can add a dollop of cheese and a few pine nuts on the spinach before making the triangle
Note: these fitayers can be stuffed with any of your favorite fillings: ground meat or turkey, tofu or tempeh, pizza fillings, chopped apples cinnamon and sugar, spiced to your taste.

Thanks for this recipe. I have pizza dough and spinach in the fridge and I now know EXACTLY what I'm going to do with it!
