Pumpkin-Swirl Cheesecake Bites

A neighbor made these scrumptious little snack bites and I had to get the recipe… makes a great after school treat.


1 1/2 cups finely crushed ginger snap cookies
1/2 cup finely chopped pecans
1/4 cup (1/2 stick) melted butter
4 pkgs. Reduced fat cream cheese (8oz. each) (room temperature)
1 cup sugar
1 tsp. vanilla
4 eggs
1 1/4 cup canned pumpkin
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Dash of ground cloves

Preparation:
Preheat oven to 325 degrees.
Mix cookie crumbs, nuts, and butter in a bowl; press into the bottom of a 13x9 pan.
Beat cream cheese, 3/4 cup of the sugar, and vanilla with mixer until blended.
Beat in eggs one at a time.
Remove 1 1/2 cups of the batter and reserve.
Stir in remaining sugar, pumpkin, and spices into batter.
Spoon half the pumpkin batter onto crust; top with spoonfuls of the plain batter, repeat layers and swirl with a knife.

Bake for 45 minutes or until center is set.
Cool completely and refrigerate for 4 hours.
Cut into bite-sized pieces and enjoy!

32 ounces of cream cheese? Whoa! See whenever I make something, I usually eat the whole thing! The last time I was looking for pumpkin in the can there was a sign that they were out of it. Something to do with growing conditions, does anyone know if it is plentiful on the shelves again?

I had the same thought as I wrote down the recipe... "wow, that's a lot of cream cheese!"... but the recipe is wonderfully balanced. Interesting about the pumpkin... I didn't detect a shortage at my grocer.
