Mystery Dinner: Leftover mashed potatoes & stuffing
Mar 18, 2009 06:15 PM 7 comments, below
I usually make shepherd's pie when I have leftover mashed potatoes but I'm looking for something that combines the potatoes with the stuffing. Any tasty ideas? I'll take separate ideas too.
2bie&newbie says,
Not totally sure about mixed ideas but here are some things we do with them separately. The stuffing is great in a turkey wrap with cranberry sauce and mayo (kind of like Thanksgiving day in a wrap - deli turkey or leftover chicken works too). For the mashed potatoes, you could use them in a stew or soup thickener, make potato pancakes, twice-baked mashed potatoes, or if you have time, you could make homemade gnocchi which is a potato-based pasta. Sometimes I'll just reheat them with some added extras (cheddar, bacon crumbles, roasted garlic). I am getting totally hungry just thinking about all these yummy things!

OK Now I'm hungry again. :P I'm thinking this, why not make the shepherds pie but with a layer of stuffing under the mashed potatoes?

Mom of Nine says,
Sounds like a fun twist although leftover mashed potatoes in my house usually translates to potato pancakes or potato soup. :)

Why not add a little rotisserie chicken and wrap it up! If I need a meal in a jiff... I'll toss leftovers in a wrap :-) (Pot roast wraps are especially yummy)

Guess what? I'm now in the mood for Shepherd's Pie...haven't made it for ages so I guess I'm now headed out to the garage to do a recipe inventory! lol

Shepherd's Pie is totally a craving food. Once I think of it, I can't get it out of my head until I eat it. :P
