When it's hot, which I know it's not, but eventually... when it's too hot to slave over the stove, what's your favorite easy summer meal? One of our best "go-to" meals is the BLT - thick sliced bacon, juicy tomato slices, romaine, and hearty whole wheat bread. How about for you?

ordered out pad thai ;) when we cook in the heat, its usually light fare - sandwiches, steak or chicken salads...side dishes become veggie sticks

Definitely some kind of wrap and now that I found relatively inexpensive tortillas from Kings Market in Gorham, I'm a happy mom! lol

I am SOOOOOOOOOOOOO BUMMED that I didn't plant tomatoes this year - there is nothing better than grabbing dinner straight out of the garden!

At this rate I won't be getting any tomatoes out of the garden either. I have maybe 2-3 blooms on the 20 plus plants I have. I'll be lucky to have tomatoes by October if we ever get some sun. :( What a sad, sad summer garden we have......

I love to cook! However, after a sticky hot day the last thing i want to do is heat up the house. Further more, I only crave cold and crunchy. Salads are so easy. Romaine, Red leaf, Feta, olives, tomato, cuke, pepper, sunflower seeds, cranberries, Red wine vinigar, olive oil, lemon juice. Spinkle in dried garlic, sea salt, pepper and any other dried herbs you dont cook without. Yum. An easy quick saute Yellow squash, Zuchinni, sweet onion, butter, salt pepper, and sprinkle with parm. I usually put it over rice. With tofu. The grill is always an option too. Soak corn in husks in H2O for an hour or more. Slice up some taters season wrap in tin foil. Burgers Dogs Chicken or fish! Volia!

If you do not mind grilling. If you slice your chicken breast thin or even by the thin already sliced and just marinate them them in Cole farms Light Sweet n Sour dressing. It is amazing. Great on a salad, in a wrap, or just barbequed with some vege's on the side. Our friends LOVE this and can't believe us when we tell them what it is. Simply Amazing
