I had an interesting conversation today at a professional event with a representative of the Cabot Cheese company. I've noticed that several brands of cheddar cheese have lately added the claim "contains 0 grams of lactose" to their labels. She told me that cheddar cheese does not, and never has had, any lactose in it. Hard cheeses such as cheddar have almost all the whey separated from the curd during cheese making, and the whey contains all of the lactose. The bacterial fermentation that takes place during aging gets rid of any traces of lactose that remain. So any cheddar cheese is essentially lactose free. Do any of you have any lactose free milk products you can recommend?

Huh, I didn't know that about cheddar cheese. That's really interesting! I do not have a lactose problem but I really like the Tofutti's ice cream, especially the chocolate flavor.

Lactaid milk is lactose free. Oakhurst's "nutrish" milk contains probiotics which may help with digestion if you are sensitive. Generally small amounts of milk are better tolerated than a full glass and it helps if consumed with other food.

Oh, that's very interesting. I would love to know if Cabot uses non-hormone treated dairy in their stuff. W can't afford to buy organic cheese due to the sheer volume around here, but really prefer cleaner food. I already buy Cabot because they have so few ingredients as opposed to all the crap-ola on the labels of other cheeses. Never knew about the lactose though. Good to know.
